"This month's small batch I wanted to create something that Celebrated the bounty of the Season. So for this recipe I steeped dandelions in the mead throughout the fermentation, lending a slight sweetness to the dry mead along with floral tones.
Rhubarb is one of my favourite flavours. I love the tart and earthy notes you get from them when used in drinks. The Rhubarb had full contact with the mead throughout the fermentation, extracting the sugars and acids and creating a robust body that complements the higher ABV.
We have the privilege of access to various types of yeast strains here in the brewery, a sweet shop for brewers. I wanted to keep within the wine category, so I chose a chardonnay yeast to accentuate the fruity characteristics and capture the essence of the waking season. Look out for notes of Pineapple, white flowers and floral honey. "
