Coffee Bochet : 9% ABV
The third iteration of the small batch releases is a coffee bochet, bouche, bouchet? Bochet. We have made probably 8 or 9 Bochets here at Gosnells, we start during summer and barrel fermented and barrel aged for about 7-8 months ready for winter.
This style of Mead is made by caramalising some or all of the honey to create a beautiful caramel colour and aroma as well as some other fun by products.
We went with a Brazilian coffee from Oldspike here in Peckham, we then DryBeaned™ for about 4 days just enough to pull out the acid and the smokey roast character and of course enough coffee aroma to slap coffee on the label. Then just let it sit for about 3 months and really let it open up and let all those fresh flavours melt together and thus creating our interpretation of a coffee mead.
