This is the first in our series of small batch meads, pays homage to one of the greatest and most consistent producers of mead globally, Ethiopia.
Our Braggot is based on orange Blossom Honey from Spanish orange groves, blended 50/50 with a grain bill of sorghum to which water has been added. Sorghum is one of the ancient grains and is often used in Africa as a base for beer, but is gluten free.
The brewery team has used US hops Cascade (c.6% alpha) and Yellow Sub (c.6.5% alpha acid) in the boil and then they've dry-hopped late-on with Cascade and an experimental hop which is high in myrcene and other essential oils.
Says Will: “We first started playing with Braggot in early 2019, using our in-house yeast and a sorghum liquid malt extract. It was surprisingly drinkable at a whopping 8%, but a little dry and thin. So we introduced a different low flocculating English Ale yeast strain, that has added extra mouthfeel and a strongly familiar ale character. We have used a blend of new & old world hops including US Cascade & US Columbus using T-90 pallets and also Boston Beer Company pallets, with some German Yellow Sub hops as well for depth.
