Plantain & Blueberry & Maple Syrup : 5.5% ABV
The fourth instalment of the small batch program is an ode to the warmer days ahead! We wanted to create a lighter fruiter yet still complex mead for the first breath after the colder winter months.
This delicious mead is barrel fermented in bourbon barrels, with our house yeast to 5.5% to which we then added 6kgs of roasted & caramelized plantains, then allowed it to mature for a few weeks. Plantain is not an overpowering fruit and does not produce a lot of aroma but what it does bring is a round and full mouthfeel. After we achieved the right body we added in 4kg of fresh frozen British blueberries to the barrels and again allowed them to macerate for a few weeks.
Once we had the colour, mouthfeel & aroma we were looking for we racked the mead from the barrels and blended them together with a little honey, some Canadian maple syrup and some freshly squeezed blueberry juice and proceeded to carbonate.
A juicy & fruity, semi sweet sparkling mead that has all those spring feels that makes you excited about the good weather ahead!
