Our signature, thoroughly modern take on mead.

This is our signature, thoroughly modern take on mead. Made with Spanish Orange Blossom honey, blended with water and then fermented through to 5.5%, our signature mead is light, crisp and refreshing.

This is Tom’s first mead, and the one closest to his heart. (You can read more about he came up with the recipe here)
What’s amazing about honey is that alongside it’s characteristic sweetness you also find a host of delicate floral and herbal notes from the nectar the bees have collected.
By using Orange Blossom honey in our mead, we get all the flavor of the nectar from an orange grove in bloom in each bottle.

    What Sommelier Wine awards said:

"One of this year's surprises: the lure and potential of mead. 'Lovely nose, honeyed, floral and fresh, though lighter on the palate with a long finish,' said Caroline Brangé of 28°-50° Mayfair, with Charles Pashby-Taylor of Dabbous agreeing: ‘Fresh honey aromas, lovely and refreshing, with a nice gentle, happy finish.' 'Hawthorn flowers, banana and ginger spice,' said team leader Angela Reddin: 'Could pair with halloumi or lighter scallop dishes.' Indeed."

One of the brewery team will begin with a quick talk about the history of mead, a tour of the brewery and a tutored tasting of Gosnells core range. This will include some samples of their special mead and other kinds of mead for comparison.

You will then be set up with all the equipment you need to brew your own mead! You will be guided through the processes. Such as: selecting the base ingredients, mixing up your “must” and pitching your yeast. You will then be briefed on what to expect from the fermentation process and how to finish your brew at home.
